Chairman's Reserve Vintage Rum 2009

Chairman's Reserve is the flagship Rum brand of St. Lucia Distillers, the only remaining distillery on the island. This vintage Rum represents the oldest expression currently available from the brand. Molasses is open fermented for 36–45 hours in concrete tanks using proprietary yeast and water from the Roseau River. Distillates from all 3 of their stills, Coffey column still, “John Dore 2” copper pot still, and Vendome copper hybrid still, are used in this expression. Each distillate was aged seperately in ex-Bourbon casks for 11 years before being blended by Chairman’s Reserve head blender Deny Duplessis. The blend is rested in oak casks briefly before bottling.

Tasting Notes:
A nose of char, menthol, and dry tobacco blossoms on the palate with spiced Bing cherry and a finish of gentian, white flowers, and dark chocolate.
