Barbadillo Amontillado En Rama "Criadera Selection" Sherry

'En Rama' means 'raw' (more or less) and speaks to an unfiltered bottling drawn from a particular Solera, rather than one blended from multiple sites. This "Criadera Selection" was drawn from their cellar known as Mil Pesetas where they have oxidatively aged Amontillado since 1920. Aged both biologically (under flor, a lattice of yeast cells) as a Manzanilla and oxidatively for a total average of about 10 years in American oak botas. It has a saline quality due to the coastal biological aging in Sanlucar de Barrameda, with nutty, mushroomy oxidative notes from the oxidative aging.
