
Sol Tarasco Charanda Añejo con Hongos

Charanda is a Denomination of Origin protected aguardiente (Rum) produced in a specific area of the state of Michoacan, Mexico. This is produced by Uruapan, perhaps the best known brand/producer from the area. It's made from 100% estate grown fresh pressed sugar cane juice that is open air fermented for a full 10 days. The mash is double distilled on 1000 liter wood fired copper pot stills and aged a minimum of 3 years in ex-Bourbon barrels. It is infused for 6 months with Blue Indigo and Oyster mushrooms. There is a long tradition of infusing aguardiente with mushrooms in this area for curative reasons.
Butterscotch and sherried raisiny notes predominate on the nose with just a whisper of earthy funk. On the palate it is sweet and balanced with complex savory and marshmallow notes. Not nearly as weird as it sounds, but rather just a deeply pleasing sipping Rum that could appeal to lovers of Sherry cask finished spirits (even though it wasn't aged in Sherry casks).
