Siembra Valles is a collaboration between Agave Educator and restaurateur David Suro, and Chava Rosales, master distiller at Cascahuin. "Valles" refers to the lowland valleys of Jalisco where Distillery Cascahuin is located. The agaves were harvested from a single estate, Rancho Encino Mocho at an age of 5 years. They were roasted in brick ovens for 72 hours and crushed in a roller mill. The native yeast fermentation was done in brick and fiberglass vats with the bagasso (agave fibers) for 72 hours prior to double distillation in copper alembics. The spirit was aged for 6 months 200 liter, medium toast American Oak barrels.Â
Cascahuin is perhaps our favorite distillery in Mexico and this bottling is consistently one of our favorite things that the make. Equisite and hard to find, it's a true treat for agave lovers.Â
