100% hand harvested Chardonnay from several vineyards in the Russian River AVA. Wild yeast primary fermentation occurred in a barrel (75% French oak) and stainless steel tank. Malolactic fermentation halted after 80% completion to retain acidity. The wine then aged for ten months in French oak barrels (30% new - Damy, Cavin, and Tremeaux) with monthly batonnage.
