Tasi Garganega Veronese 2021

Tasi means "Shhhhh" or "Shut up" in the Veneto dialect. This is 100% organic Garganega farmed from vineyards planted in a former limestone quarry located at the top of a hill on the northern part of Val d’ Illasi in Verona. The quarry was abandoned in the 1970's and the area surrounding the vineyards has been kept partially wild in addition to being used to raise livestock. The limestone soils are perfect for grape vines and they are committed to maintaining the biodiversity of the area. 

The vines are pergola trained and the grapes harvested by hand. After de-stemming, they are cold macerated on the skins for 9 hours, fermented and aged in stainless steel tanks. It is flinty and minerally with some floral and citrus notes. Clean and crisp.
