Machir Bay is the flagship bottling from Kilchoman Distillery. The regular stuff is a blend of 90% Bourbon cask matured whisky and 10% OIoroso cask. The Collaborative Vattings mix up the amounts a bit for a twist on their classic Single Malt. Bourbon casks are the majority in both with 85% in one and 95% in the other. Do you like the dried fruit, nuttiness and distinct sweetness of an Oloroso sherry cask matured whisky? Or do you prefer the toasty vanilla more malt forward Bourbon cask influence? This is a blend of malts from different cask types. 95% ex-Bourbon, 5% ex-Oloroso Sherry. 

About Kilchoman
Kilchoman Distillery was founded by Englishman Anthony Wills in 2005 at the Rockside Farm on the renowned whisky-making island of Islay, Scotland. "Islay's Farm Distillery" produces the only single farm, single malt whisky on the island. They take on the arduous task of floor malting much of their own barley and use peat from bogs near the farm for drying the barley. Their custom designed stills are unusually small which produces a much higher copper contact with the spirit. Their first releases were younger, non-age stated whiskies which was unusual for the time but is now quite common with other producers. Their spirits are characterized by a citrus note and very well integrated peat smoke. At our bar next door, we have carried every single release that was made available to us since the day that we opened in 2011. We were honored to be named a "Comraich" by the distillery. It means :"sanctuary" in Gaelic and the title is bestowed upon establishments that are bastions of Kilchoman whisky enjoyment. They are one of our favorite distilleries on earth and we carry more individual products made there than from any other single producer.
