Produced by the Fonseca family, masters of maturation in the field and the barrel, at their distiilery, La Tequileña. DIstilled in Tequila Town but aged in the highlands where their family has farmed agave for over 140 years. The piñas are cooked in an autoclave, crushed in a screw mill, fermented in stainless steel tanks, and double distilled in copper pots. It is aged in French oak barrels for 3 months. Notes of cinnamon, roasted agave and black pepper. Pale in color.
