Made at the wonderful Feliciano Vivanco Distillery outside of the town of Arandas in the highlands of Jalisco. Fully mature estate grown agaves are roasted in their brick ovens for 54 hours and crushed in a roller mill. There are 2 distinct fermentations for their blanco. The first is with ambient yeasts in stainless steel, the second is with champagne yeast. The agave fibers are added back to the liquid during fermentation for additional flavor and complexity. Classical music is played during fermentation to stimulate the yeast. The must is double distilled in copper pots, proofed with deep well water, and bottled without filtration. The brand does everything with an eye towards sustainability and supporting the local economy where it is produced. The name of the brand is a nod to the fact that they donate a portion of proceeds to the Northern Jaguar Project, a non-profit organization that works to preserve the habitat of the Mexican Jaguar.
