Pechuga means breast in Spanish and it refers to a category of fruit macerated, triple distilled mezcales that are distilled with a protein, often a chicken or turkey breast. They are celebratory spirits classically made during the harvest season. Ripe fruits, spices and herbs are put into copper pot stills and covered with twice distilled Espadin Mezcal to macerate overnight. The following day, a raw turkey breast is hung in the still prior to a third distillation. The infusion and protein give the finished product a fruitiness and viscosity with notes of citrus, cinnamon, and tropical fruits. Made by Maestro Martimiano Hernandez in the village of San Juan del Rio, Oaxaca.
