Espadilla is a varietal of agave Angustifolia Haw, the same species as the common agave Espadin. It sometimes refers to wild Espadin, other times to just a close genetic relative, as in this case. Maestro Mezcalero and founder Edgar Gonzalez transplants young wild Espadilla agaves from the area in San Cristóbal Lachirioag, Oaxaca to the lands next to his palenque. They mature faster than Espadin, coming to full size and going to flower in only 5 years. He cuts the quiotes (flowering stalks) on a handful of the Espadilla and leaves them as "capon" for 3 to 6 months when the agaves develop some secondary flavors and aromas. This mezcal has notes of tropical fruits, some pleasant cheesy/lactic aromas, a bit of spice and some lingering smoke.
