Produced by Maestros Mezcaleros Romulo Sanchez Parada and his brother Vicente Sanchez Parada in the village of Candelaria Yegole, Oaxaca. They are the founders of Rey Campero and Herencia de Sanchez Mezcal. Their palenque is in the remote, high elevation Sierra Sur region of Oaxaca about a 3 hour drive from Oaxaca City. They farm agaves on the high arid plains above the village and are probably best known as one of the first brands to commercially produce Mezcal from Jabali (Agave Convalis), a notoriously difficult to work with varietal that produces beautiful spirits.
This is made from wild harvested Tepeztate (Agave Marmorata) that are 15-18 years old. The agaves are roasted with Encino wood in rock lined earthen pits and crushed with a tahona. The are fermented with spring water and ambient yeasts in wooden vats and double distilled in copper alembics. This is a delightful and complex sipper with vegetal notes, grape bubblegum, and that indescribably Tepe fruit quality.
