Rayo Seco Sacatoro comes from the mountains of northern Guerrero and is made by 3rd generation Maestro Vinatero Israel Petronilo. Penca Ancha (Agave Nussaviorum) is an agave varietal that is new to us. Maestro Petronilo pit roasts the agaves in an earthen oven and hand mashes them in a canoa (wooden dugout or "canoe") with an axe and wooden mallet. It is fermented with spring water and ambient yeasts and double distilled in copper alembics.
It has notes of lemongrass, mint, cacao, agave sweetness, and a soft and well integrated smoke.
