Mezcal Derrumbes San Luis Potosi

Agave Salmiana from the state of San Luis Potosi, Mexico. This is made by Maestro Juan Manuel Pérez Juárez in the village of Charcas. As is common in this state, the agaves are roasted in above ground ovens called hornos so there is little to no smoke in the cooking process. The agaves are naturally fermented in pine vats and double distilled in small copper alembics. It has a chalky note with flavors of green pepper and agave sweetness.
