Tornillo is a rare Agave Karwinskii that is similar to Tobaziche but smaller in size overall and with slightly different pencas (spines). "Tornillo" means "screw" in Spanish and the pencas of this agave are twisty like a screw. This bottling is produced by Felipe and Ageo Cortes in the village of Mengoli de Morelos in Miahuatlan, Oaxaca. The agaves were roasted in a rock-lined earthen pit with encino wood and crushed with a stone tahona. The mash was fermented in pine vats with ambient yeasts and well water. They usually use a Refrescadera still which is a pot still with a sleeve on the top that is filled with water. The water cools the vaporized distillate so that it recondenses and allows the Maestro to achieve the equivalent of a double distillation from a single pass. However, this batch was distilled without adding water to the top of the still so it was double distilled in the classic manner and proofed with puntas y colas (heads and tails).
A simply lovely Karwinskii with the sharp minerality that we expect from Tobasiche. Some overripe banana and floral notes and a lovely agave sweetness.
