Lagrimas del Valle El Sabino 2023 Reposado

Lagrimas del Valle is a collaboration between Salvador "Chava" Rosales of Tequila Cascahuin and Lyons Brown of Altamar Brands who was one of the people behind Tequila Ocho (he is no longer affiliated). This tequila follows a similar concept in that they harvest agaves from a single plot of land, El Sabino in this case, and make a batch of vintage dated tequilas from that plot. This is the third edition from the brand and it's a stunner. The agaves are brick oven roasted and crushed with both a stone tahona and mechanical mill. The juice is spontaneously fermented in wooden tinas and fermented with bagasso (agave fibers) in stainless steel tanks. It's twice distilled in stainless steel pots with copper coils.
