Fuenteseca is the project of the Fonseca Family from Tequila Don Fulano. They are masters of maturation and have crafted a line of long aged tequilas that manage to maintain the flavors and aromas of the agaves they are made from despite their extended time in oak casks. 

This bottling is a bit of a tour of the map of Tequila production in a single bottle. The agaves are from a single estate in Michoacan called "Las Antenas". The Don Fulano distillery is in Tequila town in Los Valles or the Lowlands of Jalisco. Their aging facility is next to their agave fields which is in Los Altos or the Highlands of Jalisco. The agaves are cooked in a low pressure autoclave and crushed with a screw mill. It is fermented in stainless steel tanks and then double distilled in copper pots. The spirit was then rested for several years in stainless steel tanks, allowing the flavors of the spirit to meld and soften it's rough edges. The resulting liquid is stunning.Mineral, citrus, a salty/briny quality, pepper and spices on the palate. And the higher proof doesn't show itself as it drinks very easily. Legendary blanco tequila.
