Mezcales Cuish Espadin

Mezcales Cuish is a project from the Monterrosa Family from Santiago Matatlan, Oaxaca. It began with them bottling spirits from producers from different areas of Oaxaca but they have since built their own palenque in Matatlan. This was their first release in the US from their palenque. It is produced in the traditional manner of pit roasting the agaves, milled with a stone tahona, and the mash fermented with spring water and ambient yeasts in Pine vats. The must is double distilled in copper pots and proofed with heads and tails.
