Tequileria Cascahuin is one of the finest distilleries anywhere on earth. Master Distiller Chava Rosales and his team produce stunning Lowland/Valles Tequila at their facility in El Arenal, Jalisco.
This is a very special batch of blanco tequila that is a blend of 6 different Tequilas produced with a variety of different methods. First off, all of the agaves are estate grown. They are roasted in either their brick steam ovens or in an underground pit (as is done with most Mezcal). They are mashed in either a roller mill or with a stone tahona. All of the mash is fermented with ambient yeasts but in a variety of different vessels: cement tank, stainless steel tank, or wooden vats. All 6 tequilas were distilled to proof in their stainless steel and copper alembic stills. Finally, they are blended without adding any additives or water for proofing, and bottled with 3 different labels done by the Mexican artist Mauricia Laura. (Unfortunately we are unable to field requests for specific labels.)
Anyone familiar with the 11 Brix or Cerro de Luz releases from Cascahuin know what they are in for here. It is a piece of art, both inside of the bottle and the bottle itself.
