This is a declassified Tequila from the highlands of Jalisco. The owners of the distillery are dedicated to farming and producing spirit from Agave Chato, which was traditionally used in Tequila production many years ago but is now not allowed. This has led to conflict with the CRT (the regulatory body that governs Tequila) and ultimately to them opting out of using the word "Tequila" on their bottles. The distillery was founded in 1950 by Don Alfonso Jiménez Rosales, a co-founder of Tequila Herradura who, after a family dispute, set off to start his own brand. The old labels used to have a Caballito ("Little horse" in Spanish) kicking off a horseshoe (which is the logo of Herradura).
This is in fact Tequila in everything other than name as this particular bottling is made exclusively with Tequiliana/Blue Weber Agaves. We love this Tequila* for it's dedication to tradition, independence, and savory and complex flavor profile.
