Manzanilla is a style of Fino Sherry that is aged by the sea in the village of Sanlucar de Barrameda, Spain. Fino sherries age under Flor, a lattice of yeast cells that protect the wine from oxidation and create some of the driest beverages on earth. The proximity to the sea imparts the Sherry with salinity and an oceanic quality that is mesmerizing. A Manzanilla Pasada is made by allowing the flor to die off and exposing the wine to a period of oxidative aging which gives it some nutty and additional briny notes. Pastrana is a single vineyard from which the grapes are sourced and the sherry ages for over 12 years prior to bottling. High quality Sherry like this one is an affordable luxury that can be enjoyed in almost any setting, whether you're pairing it with salted nuts and charcuterie or just drinking it on its own.

Bodegas HIDALGO LA GITANA was founded in 1792 and since then the firm has passed from parents to children, being today one of the few companies in the framework, managed by the family and directed by the eighth generation in direct line of the founder. Don José Pantaleón Hidalgo founded in 1792 the Hidalgo Winery, when he bought a small storage warehouse from Don Roque Vejarano. Although it would be during the nineteenth century when the company would grow to become one of the most important producers of Manzanilla in the world. The name refers to its flagship product, “Manzanilla LA GITANA”, endorsed by several relevant international awards, is the most popular Manzanilla both in the national and international market. The winery uses grapes from its own vineyards, located in the payments of Balbaina and Miraflores, considered the best in the Marco.
