Tierra Noble Tequila Añejo

40% ABV

Tierra Noble is made at a Distillery called La Estacada which is located at 7200 feet above sea level in the highlands of Jalisco. It's one of the highest elevation distilleries in the world. They harvest their Blue Weber agaves at full maturity and shave the spines of the piñas almost completely off which reduces any vegetal or earthy flavors in the resulting ferment. The high elevation causes a slower, prolonged fermentation of 8 days and then an additional malolactic fermentation afterwards. The mosto is double distilled in stainless steel alembics with copper coils.

This Añejo is aged for 2-3 years in a mix of American and French oak barrels. Woody with dried fruit and vanilla notes, it is dry and elegant on the palate. A tremendous value bottle of Añejo from an unheralded but skilled producer.
