Rey Campero Ponche de Frutas

Produced by the Sanchez family in the village of Candelaria Yegole, Oaxaca. This is a vegan Pechuga of sorts as it is not distilled with a protein, just fruits and spices. They harvest fully mature Espadin agaves which are pit roasted and milled in a stone tahona. They are fermented in pine and sabino wooden vats with ambient yeasts and double distilled in copper alembic pots. Prior to the second distillation, guavas, apples, raisins, and cinnamon are added to the still to macerate overnight. This adds a fruity viscosity and richness to the finished spirit. It's rested in glass demijohns for 9 months prior to bottling.
