El Jolgorio Tobala

This Tobala was made from Agave Potatorum Silvestre (wild grown) from the village of San Baltazar Guelavila, Oaxaca. Made by the brilliant Maestro Gregorio "Don Goyo" Martinez Garcia in 2023 shortly before he sadly passed away. 

Produced in the traditional method of pit roasting the agaves, crushing them with a mule-drawn tahona, spontaneous fermentation in pine vats, and double distillation in copper pots. It is bright and fresh with some bubble gummy tropical fruit and earthy on the finish.
