The Bee's Knees is a classic Gin Sour with Honey. The good people at Barr Hill Distillery in Vermont have created Bee's Knees Week to highlight the importance of bees as pollinators who are so crucial for our food system to work. They are a farm distillery and produce spirits made from honey and their Gin which is made from neutral grain spirit but contains local wildflower honey to lightly sweeten and add some botanical flavor. This kit contains one 750mL bottle of their namesake Old Tom-style Gin, 1 pound of their raw honey, and 2 adorable honey bear glasses (lemon juice not included). The kit has enough product for 12+ cocktails if you follow the spec below. 

Bee's Knees
2oz Barr Hill Gin
1oz Fresh Squeezed Lemon Juice
1oz Honey Syrup (see note below)

Shake all ingredients vigorously with ice and fine strain into a frozen coupe glass. Garnish with a lemon peel expressed over the top of the drink.

Note: To make a 1:1 Honey Syrup, combine the raw honey and water in equal amounts in a small saucepan over medium low heat until the honey is fully melted and mixed with the water. Let cool, bottle and refrigerate for up to 1 month. Makes an excellent sweetener for Iced Tea too.
