Veso Aperitif is the brainchild of Chris Beyer, a former software engineer who makes his Vermouth and Aperitivi on Treasure Island in San Francisco. This is a Vermouth that he created in collaboration with Trick Dog, the world renowned cocktail bar in San Francisco. A base of California white wine is fortified with neutral grape spirit from St. George Spirits in Alameda. It's infused with fig leaf and toasted coconut, the primary flavors, in addition to a number of other botanicals. Lightly creamy but still bright and balanced. A lovely and unique Blanc Vermouth.
Producer Notes:
We teamed up with the legendary Trick Dog bar in San Francisco to build a vermouth around fig leaves, a surprising ingredient with an incredible depth of flavor.
When infused, fig leaves taste somewhere between tropical coconut, nutty vanilla, and palo santo. We wanted that flavor to stay front and center, so we built the rest of the vermouth to support it: cacao for depth, quassia and cinchona for a clean bitterness, coriander for a citrus top note, and a little toasted coconut to amplify the rich finish. The result is lush, tropical, and just plain delicious.
