Redwood Empire Pipe Dream 101 Proof Bourbon

Redwood Empire is a craft whiskey brand founded in 2013 in the town of Graton, California in the Russian River Valley north of the San Francisco Bay Area. They took their name from the giant redwood groves that have defined that region for millenia. They have since moved to a larger facility on Mare Island in Vallejo in the East Bay Area. They started by sourcing whiskey from distilleries in Kentucky, Tennessee, and Indiana while they layed down barrels of their own distillate and waited for them to mature.

Pipe Dream is their flagship Bourbon. This 101 proof expression is not just higher in proof than the regular release, but also contains older stocks of sourced whiskey and a higher percentage of their own grain to glass spirit. The combined mashbill is 73% corn, 19% rye, 5% malted barley, and 3% wheat and is a blend of 5-15 year old bourbons from Indiana and Kentucky in addition to their own distillate. It was by far our favorite expression when we tasted their full line of offerings. Notes of caramel and vanilla, apples and citrus and a nuttiness that almost reminds us of another 101 proof Bourbon, Wild Turkey. Delightful stuff that is a great sipper and will mix beautifully.
