Flor del Desierto Sierra sotol is made by Jose Armando Fernandez Flores from the wild harvested Dasylirion Wheeleri varietal of Sotol plants in the Madera region of Chihuahua, Mexico. The plants are 18-25 years old at harvesting and are pit roasted and shredded with axes and foot stomped by the Sotolero's cows. Open fermented in wooden tanks and the resulting mash is double distilled in clay pots.
Smoky cedar and earthy/dusty notes on the nose. Creamy and rich on the palate with milk chocolate notes and some ashy BBQ flavors.
