Made from a field blend of apples from a farm in Mendocino, the cider is cold fermented and then pot distilled with more fresh apples. The brandy is aged in used French oak barrels as well as new and used American oak barrels with an average age of 6-9 years old with the oldest brandies in the mix being 11 years old.
This smells and tastes of apple pie with some pastry and baking spice notes framing the fresh apple aromas and flavors. A bit of apple sweetness on the long and pleasing finish. Another home run from our dear pals at St. George.
