Santa Maria al Monte Amaro

Fabulous, Fernet-like Amaro whose recipe was originally developed by the monks of the Sanctuary of Madonna del Monte in Genoa and gifted to the Duke of Aosta in 1892. Produced in Genoa for generations, it is now made to the original spec at the Caffo Distillery in Calabria, Italy. 

Over thirty botanicals featuring gentian, bitter orange, aloe, saffron, cardamom, coriander, juniper, and mountain germander (herb native to the Alps) are cold macerated for 2 months in neutral grain spirit. Aged for 8 months in barrel, it's then  sweetened with beet sugar and aged a further 6 months in barrel. Notes of mint, cardamom, and a whisper of smoke on the nose. On the palate it is bracingly bitter with some citrus and cola notes.
