Wild Common Añejo Tequila

Wild Common is produced at the Cascahuin Distillery in El Arenal by Chava Rosales and his team. They make some of the finest traditional Tequilas in the world. The brand was founded by Andy Bardon, a National Geographic photographer and extreme sports athlete who wanted to make an additive free Tequila of the highest quality. He was fortunate enough to meet the Rosales family while shooting in Jalisco and the rest is history. 

This is their first Añejo release and it's a dandy. The fully ripened Tequiliana agaves are roasted in small brick ovens for 3 days prior to crushing in both their stone tahona and a roller mill. It is fermented with ambient yeasts and with bagasso (agave fibers) in both stainless steel and cement tanks prior to distillation in copper and stainless steel alembics. It's aged for over 1 year in ex-bourbon casks.

It's extremely rare to see an Añejo release from this distillery because their aging facilities are small and they do such a swift business in unaged Tequila that there is limited motivation to expand it. That said, this is stunning Tequila. Overproof (also a rarity with Añejo Tequila) but not the least bit hot. It's agave forward with notes of cinnamon, mint, barrel char and butterscotch. Long and warming finish.
