The Rums of Mexico - Caña Criolla - Pedro Bautista

From Zoquiapam Boca de los RÍos, Oaxaca. Cultivated by Daniel Vega Santiago in the arid village of Zoquiapam Boca de los Ríos, Oaxaca, this yellow-colored, hearty cane variety grows amongst columnar cactus and biznagas, and is irrigated from water drawn from the nearby Río Monteflor. It was distilled by local maestro Pedro Bautista on a handmade, wood-fired four plate continuous copper still.

TASTING NOTES

Sourdough, apricot, and mango on the nose. Almond, currants, bubblegum, and sourcherries on the palate.
