The ImpEx Collection Bicuixe - Felipe Cortes

Impex is an importer and independent bottler of fine spirits from around the globe. This is a single batch of Mezcal from Maestro Mezcalero Felipe Cortes. He produces Mezcal for Mal Bien, Mezcalosfera/Mezcaloteca, and others and is one of our favorite distillers. His palenque is located Mengoli de Morelos, a village in the Miahuatlan region of Oaxaca. Bicuixe is an Agave Karwinskii, a family of plants that sort of look like dwarf palms in that they have a short stalk that the piña and spines of the agave sit atop. Miahuatlan is perhaps the best terroir for this long maturing, incredible agave. The agaves are pit roasted with encino wood and milled with a stone tahona. They are fermented in pine vats with ambient yeasts. They are distilled in a copper refrescador still in just a single pass. 

Textural and creamy with sweet tropical fruit notes, some lactic funk, a bit of spice. A simply stunning batch of Mezcal.
