St. George Spirits Botanivore Gin

Delightfully aromatic gin from our good friends at St. George Spirits in Alameda. The most Juniper forward of their gins but not exactly a classic London Dry style. In addition to juniper, you'll find angelica root, California bay laurel, bergamot, Malabar black pepper, caraway, cardamom, cilantro, Saigon cinnamon, citra hops, coriander seed, dill seed, fennel seed, ginger, lemon, lime, orris root, Seville orange, and star anise. The juniper, California bay laurel, and cilantro are vapor distilled while the remaining 16 botanicals are distilled in their copper pot after being left to macerate in the spirit overnight. 

It's fresh and herbaceous with floral and citrus notes, a bit of spice and a ton of complexity. We like it in savory applications like a Dry Martini, Gibson, or in a G&T.
