Saison Sherry Cask Caribbean Rum

Saison is a brand started by Master Cognac Blender Jerome Tessendier in Charentes, France. He purchases casks of Rum from different Caribbean islands and does further aging, blending, and bottling at his facility in the Cognac Region of France.

This is blend is 40% pot still molasses-based Barbados Rum, and 60% column distilled sugarcane Trinidad Rum, both aged tropically for 5 years in Bourbon barrels. They are then shipped to Charentes where they are aged for 1 year in Cognac barrels before being married and finished in ex-Pedro Ximenez Sherry casks. It is additive free and non-chill filtered.

The Sherry cask influence is profound, giving the Rum a natural sweetness and depth. This is a tremendous value bottle that is a lovely sipper and makes a wonderful Rum Old Fashioned or Rum Manhattan.
