Rezpiral Series 7 Lumbre Aureliano Hernandez

Lumbre is a rare and unclassified agave that is endemic to the area around San Baltazar Guelevila where it is known as "Maguey of fire" due to its red pencas. Some refer to it as a variant of Angustifolia, others say it's a Karwinskii. Aureliano Hernandez is an agave farmer and Maestro from that area who supplies many of the agaves for the Rezpiral project in addition to making his own mezcal. 9 year old Lumbre are roasted in an black oak fired earthen oven for 8 days. The agaves are milled with a horse drawn tahona prior to natural fermentation in pine vats for 8 days. The mash is double distilled in copper alembic pots.
