This batch Espadin was made by Berta Vasquez in San Baltazar Chichicapam, Oaxaca in 2021. 8-10 year old Espadin were roasted in an earthen pit and milled by hand with machetes and a stone tahona. They were fermented for 8 days with well water in cypress tanks and double distilled in copper alembic stills. The resulting batch of 350 liters was adjusted with heads and tail ('puntas y colas") with no water added.
