Rezpiral Ensamble Series 9 - Simeone Ramirez Tepextate-Tobaziche-Mexicano

From a tiny batch of 65 liters made from Tepextate, Tobaziche, and Mexicano of 10-24 years of age. Made by Simeon Ramirez in the village of San Agustin Amatengo in Oaxaca. The agaves are pit roasted for 3 days and mashed with machetes and a mechanical mill. Fermented in cypress vats for 6 days, distilled a single time in a copper refrescadera still and proofed with spring water. Monstrously fragrant and complex aromas, a sweet and beguiling color palate of flavors awaits you. A stunning Ensamble.
