Rey Campero Mexicano Penca Larga + Coyote

51% ABV

Produced by the Sanchez family in the village of Candelaria Yegole, Oaxaca. This is an ensamble of Mexicano Penca Larga, an unclassified agave, and Coyote (agave Lyobaa/Iyobaa). They harvest their agaves from the arid plain high above their palenque. The agaves are pit roasted in an earthen oven and crushed with a stone tahona. They are wild fermented with ambient yeasts in pine tanks and double distilled in copper alembic stills. This batch was aged in glass demijohns for 19 months prior to bottling. Vegetal sweet with earthy minerality and a subtle smoke aromas.
