Rey Campero Espadin

Produced by Maestros Mezcaleros Romulo Sanchez Parada and his brother Vicente Sanchez Parada in the village of Candelaria Yegole, Oaxaca. They are the founders of Rey Campero and Herencia de Sanchez Mezcal. Their palenque is in the remote, high elevation Sierra Sur region of Oaxaca about a 3 hour drive from Oaxaca City. They farm agaves on the high arid plains above the village and are probably best known as one of the first brands to commercially produce Mezcal from Jabali (Agave Convalis), a notoriously difficult to work with varietal that produces beautiful spirits.
The fully mature Espadines are roasted with Encino wood in rock lined earthen pits and crushed with a tahona. The are fermented with spring water and ambient yeasts in wooden vats and double distilled in copper alembics. The finished spirit is rested in glass demijohns for several months prior to bottling. The glass aging gives the spirit a softer mouthfeel and harmonious flavor. Soft smoke, ripe espadin fruit, citrus and pepper flavors mark this tremendous value sipper.
