This is unlike any other agave syrup/nectar we've ever tried. Sadly most agave syrups on the market are made from low quality agaves that are cooked in difusors, a large machine that uses industrial acids to "cook" the agaves and strip all of their sugars for the syrup. Although they are marketed as a "cleaner" sugar source, they are anything but.
This is made from fully mature Blue Webber agaves (that are geo-located on the label of the bottle) cooked in a brick over for 36 hours and crushed with a tahona and roller mill. It's the same process used to make high quality, additive free tequila prior to the point of fermentation. It is quite different in flavor and look. Thicker, darker, more earthy and rich. Loads of agave flavor and a molasses-like, complex sweetness. Stunning stuff. The brand was started by Grover Sanschagrin, the founder of the Agave Matchmaker website (formerly known as Tequila Matchmaker).
