Puntiagudo Tobala - Onofre Ortiz

Puntiagudo is a Mexican-owned independent bottler of artisanal Mezcal from multiple regions of Mexico. This Tobala was made by Maestro Onofre Ortiz in 2022 in Miahuatlan Oaxaca. The 13 year old Tobala (Agave Potatorum) were roasted in a conical earthen pit  with Guamachil wood. The cooked agaves were hand milled with machete and fermented in pine vats with ambient yeasts and well water. The mash was double distilled in copper Alembic pots with no added water. 

On the nose it is very characteristic of Tobala from Miahuatlan. It is earthy with bubble-gummy fruit and some black pepper. On the palate it sweet up front with a dusty/mineral mid palate and a long peppery finish. A powerful and complex Tobala.
