Puntiagudo Espadin Pechuga - Luis y Sergio Juarez

Puntiagudo is a Mexican-owned independent bottler of artisanal Mezcal from multiple regions of Mexico. This batch comes from the village of San Agustín Amatengo, Oaxaca in the Ejutla region. Luis Juarez and his father Sergio are 4th and 5th generation mezcaleros who also own their own brand called Gozona. Like most producers in this region, they use a Refrescadera still, which is a modified copper pot still where slow distillation and temperature control allows a finished spirit to emerge after a single distillation instead of the usual 2. 

Pechuga means "breast" in Spanish and it refers to a category of fruit macerated mezcales that see an additional distillation with a protein, often a chicken or turkey breast. They are celebratory spirits classically made during the harvest season. For this batch, blackberries, strawberries, blueberries, raspberries, cinnamon and lime peel were hand mashed in a small wooden barrel. The mash was added to the still along with 150 liters of Espadin Mezcal. A turkey breast was hung inside of the still prior to distillation. The fruit infuses into the mezcal and the vapors pass through the turkey breast. The finished spirit has tart fruit flavors, subtle citrus and spice, and a savory depth. A truly delightful batch of Pechuga.
