Novo Fogo Barrel-Aged Cachaca

Cachaca is a fresh cane juice based spirit and the national liquor of Brazil. It's actually the third most consumed spirit in the world after Vodka and Baijiu. Novo Fogo is a carbon negative distillery in the Atlantic forest region of Brazil. They use 100% certified organic Brazilian sugar cane and do extensive planting of native trees to reforest the area around their facilities. 

Their fresh pressed cane juice is fermented for 18 hours with wild/ambient yeasts prior to double distillation in copper alembic stills. The spirit is aged in ex-Bourbon barrels that are sanded and re-toasted. The aged spirit is not chill filtered prior to bottling. It has notes of banana bread, chocolate, and cinnamon.
