Mezcalosfera Pechuga de Papalomè

47% ABV

Made by Maestro Erubiel Mota in Zapotitlán de Lagunas, Oaxaca. Papalomè is the local name for Agave Cupreata. The 12 to 15 year old agaves for this batch were pit roasted with oak and pine wood and crushed with a mechanical mill. The were fermented in pine tanks with well water and ambient yeasts. The mash was distilled in a copper pot and prior to the second distillation, macerated overnight with fruits and spices. A chicken breast was hung inside of the still prior to the second distillation. The alcohol was adjusted with heads and tails with no water added.

A nose of ripe tropical fruit and a whisper of overripe funk. On the palate there is a complex spice character with notes of anis, black pepper, walnuts and a bit of salinity. Finishes dry and warming.

About Mezcalosfera:
Mezcalosfera is the export brand of the world renowned tasting room Mezcaloteca in Oaxaca City, Mexico. To call it a tasting room sort of undersells it. It's a Library/Temple/Education Center for Mezcal. Founded in 2010 by Silvia Muñoz and Marco Ochoa, they source batches of mezcal directly from producers throughout Mexico. Their distinctive label lists all of the details of production and provenance, a style of transparency that has thankfully been copied by numerous other brands in the Mezcal world since. They work with only traditional producers who they compensate fairly and purchase from in a sustainable manner. They are a beacon of quality and integrity in the space.
