Mezcalosfera Espadin Destilado con Frutas

This is a Pechuga-style Mezcal but made without any proteins. Maestro Ausencio Hernandéz harvests fully mature Agave Espadin from his family's land in San Baltazar Guelavila, Oaxaca and roasts them in an earthen oven with mesquite and pine wood. The cooked agaves are milled with a stone tahona and fermented with well water and ambient yeasts in pine tanks. The mash is distilled once in a copper alembic. The "ordinario" or first distillation is added to the still along with apples, pears, lemongrass, orange, tangerines, grapefruit, and watermelon and left to macerate overnight prior to a second distillation the following day. It's adjusted with heads and tails with no water added. It is citric and fruity with a pronounced lemongrass note.
