Agave Salmiana from the state of San Luis Potosi and made by Maestro Juan José ‘Che’ Hernández. The wild agaves take 12-16 years to come to full maturity. Once harvested, they are cooked in a steel autoclave, milled in a basket press crusher, fermented in underground cement tanks, and distilled in a custom copper still. It has grassy and herbal notes with aromas of bell pepper and jalepeño. Sweet and herbaceous on the palate with very little smoke.
