Mezcales Cuish Ramîrez

Mezcales Cuish is a project from the Monterrosa Family from Santiago Matatlan, Oaxaca. It began with them bottling spirits from producers from different areas of Oaxaca but they have since built their own palenque in Matatlan. This is an extremely rare and fascinating Mezcal from Maestro Francisco Garcia Leon. Ramìrez is an unclassified agave that we've been told is a hybrid between some sort of Agave Karwinskii (maybe Madrecuishe) and Agave Convalis (Jabali). Apparently it looks like a dwarf Karwinskii. Maestro Leon's palanque is in the village of San Guillermo in Miahuatlan, Oaxaca. The agaves are pit roasted and crushed with a horse drawn stone tahona wheel. The mash is spontaneously fermented in Sabino wood tanks with spring water and double distilled in copper pots with a refrescadera cap. It was proofed with heads, hearts and well water to a batch of just 66 liters.

It's pretty rare that we come across an agave we've never heard of with flavors that we've never tasted. So we were over the moon to sample this rare and complex spirit. On the palate it is sweet and earthy, with a nearly indescribable fruit flavor. On the nose it smells very much like Karwinskii's from Miahuatlan do, with some flinty mineral notes and green vegetal aromas. But the flavor is wild and super delicious! A great bottle for the Mezcal lover who's seen it all.
