Meikle Tòir 5 Year "The Sherry One"

"Mee-kuhl Tor" means "Big Pursuit" in Scottish Gaelic and it's a line of peated Malt Whiskies from the GlenAllachie Distillery in Speyside. Speyside whiskies are rarely peated, so this line is a bit of an outlier in the region. Master Distiller Billy Walker uses mainland Scottish peat at 35 PPM's and a quite long 160 hour fermentation. This extended, slow fermentation allows greater development of fruity and complex esters, which are aromatic compounds in the mash. It is primarily aged in ex-Bourbon casks and finished in both Pedro Jimenez and Oloroso Sherry puncheons. It is bottled at a robust 48% without any added color or chill filtration. The spirit is fruity with sweet smoke and notes of cigar box, toffee, figs, and chocolate.
