An Alto (Agave Inaequidens) from the town of Rio de Parras in Michoacan. The agaves are pit roasted and mashed by hand prior to fermentation with spring water in limestone dugouts. It's double distilled in a Filipino still of wood and copper and adjusted with heads and tails, no water added.
